Ingredients

  • 2-3 lbs chicken wings, separated into drumettes and flats
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder  
  • 1/4 teaspoon cayenne pepper (optional)  
  • Vegetable oil for frying  

Lemon Pepper Sauce

  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup lemon juice
  • 2 tablespoons lemon zest
  • 1 tablespoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder

Tips

  • For extra crispy wings, you can double-fry them. After the first frying, remove the wings from the oil and let them rest for a few minutes. Then, fry them again for another 2-3 minutes, or until golden brown and crispy.
  • Adjust the amount of lemon juice and pepper to your taste.
  • For a milder flavor, use less black pepper.
  • Garnish with fresh parsley or chives for a pop of color and flavor.

Directions

  1. In a large bowl, combine the flour, salt, pepper, garlic powder, and cayenne pepper (if using).
  2. Add the chicken wings to the bowl and toss to coat evenly.

Fry the wings

  1. Fill a large, heavy-bottomed pot or Dutch oven with about 4 inches of vegetable oil. Heat the oil over medium-high heat to 350°F (175°C). Use a deep-fry thermometer to ensure accurate temperature.
  2. Carefully add the chicken wings to the hot oil in batches, being careful not to overcrowd the pot. Fry for 6-8 minutes, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C).  
  3. Remove the wings from the oil with a slotted spoon and transfer them to a wire rack lined with paper towels to drain.

Make the lemon pepper sauce

  1. In a medium saucepan, melt the butter over medium heat.
  2. Add the lemon juice, lemon zest, black pepper, salt, and garlic powder. Stir to combine.
  3. Bring the mixture to a simmer and cook for 1-2 minutes, or until slightly thickened.

Coat the wings

  1. Transfer the fried chicken wings to a large bowl.
  2. Pour the lemon pepper sauce over the wings and toss to coat evenly.
